While you could make this as one large pavlova, or serve it as a classic individual Eton messes, I prefer this hybrid version: a beautiful mess of a mountain made from crushed meringue, whipped cream, and fruit, while still giving everyone their own glass. You get the best of both worlds: the ease of individually portioned desserts and the drama of a show-stopping centrepiece. As everyone takes their glass, the stacked meringues tumble and break apart, which only adds to the fun and theatre of the dessert.
