I have just finished cramming as many clothes as I possibly can into a carry on suitcase as I am off on a ~2 week long trip tomorrow to Croatia with my mom. Which I trust will be filled of lots of swimming, wine tastings, and eating as many local delicacies as possible! If you have any Dubrovnik or Korcula recommendations please let me know!
In the mean time, I am contemplating if it is worth breaking out my blender so I can make another batch of these salty cucumber mint margaritas. They are perfectly crisp, refreshing and the right amount of sweetness - perfect for a hot sunny summer day!
Recipe:
Mint simple syrup:
½ cup granulated sugar
½ cup water
handful of fresh mint leaves
Margarita:
1/2 cucumber
2 oz blanco tequila
¾ oz fresh lime juice (about half a lime)
¾ oz mint simple syrup
½ oz Cointreau
Garnish options: thin cucumber ribbon or wheel, fresh mint sprig, and a lime wheel
Directions:
Make mint simple syrup: Combine sugar, water and mint leaves in a small sauce pan. Heat on stove over medium for a few minutes until sugar has dissolved. Remove from heat, transfer to a bowl and set aside to cool.
Make cucumber juice: Chop cucumber and blend until smooth. Pour through a fine mesh sieve to remove pulp.
Note this makes more cucumber juice than you need, can be used for more margs or store in the fridge and have as part of your breakfast.
Prep glasses: rub the rim of your glass with lime and roll rim on a plate with salt.
Mix the cocktail: In a shaker filled with ice, combine 1 oz cucumber juice, 2 oz tequila, ¾ oz lime juice, ¾ oz mint syrup, and ½ oz Cointreau. Shake until the exterior is frosty.
Serve: Strain over fresh ice in your prepped glass, then with cucumber ribbon, fresh mint and/or a lime wheel
